Dumbblondies ice coffee

Hungry Girl is amazing! I read her emails daily, I have both her cookbooks and always bring her shopping list with me when I go to the supermarket.  Since I love junk food I think she makes delicious alternatives that I can still enjoy and not gain weight. The only thing is some of her recipes have soooo many ingredients! It’s hard for me to buy so many things that I am not going to use on an every day basis, it seems like a waste. I try to make substitutions, for instance her ice coffee recipe includes light vanilla soy-milk, Fat- Free coffee mate and malt powder and I’ll just use Almond Breeze and Fat-Free Half and Half which both lasts a very long time.

It’s good if I was home and I had access to my parents fully stocked Kitchen with all the spices, coco powder, fat free cheeses and vanilla extract a girl can ask for but at college it is really difficult to do.

HG Version

1/4 light vanilla soymilk

1 tablespoon of Fat-Free non-dairy liquid creamer

2 teaspoons malted milk powder

1 tsp of unsweetened cocoa

1 tsp instant coffee

3 no-calorie sweetener packs

5 -8 ice cubes or one cup of crushed ice

Put all dry ingredients in a tall glass. Add 2 oz. of hot water and stir until all ingredients have completly dissolved. Add ice and 5 oz. of cold water. Top off with soy milk and creamer, and give it a stir.

1 serving: 69 calories, 1 gram fat, 62 mg sodium, 11 gram carbs, .5 gram fiber, 4 gram sugar and 2 grams sugar.

Dumbblondies recipe:

1 tsp instant coffee

1/2 tsp unsweetened cocoa (if you don’t have use 25-calorie hot chocolate – and just save the rest to make hot chocolate later!)

1/4 cup Almond Breeze unsweetened vanilla (or just regular skim milk)

splash of Fat-Free half and hald

2 splenda’s

5 ice cubes

Put all dry ingredients in a tall glass. Add 2 oz. of hot water and stir until all ingredients have completly dissolved. Add ice and 2 oz. of cold water. The mix in the Almond Breeze and splash of half and half.

1 serving: about 26 calories for a delicious creamy treat
